In 1996 Senor Sam's Mexican Grill opened for business. In 1997 an underused banquet room and a storeroom were combined and remodeled into the Cantina. Opening with a bang in early 1998, the Cantina started strong but the business soon began to slow. Unfortunately this trend continued and by the year 2000 the numbers warranted a change, or the Cantina would have to close. Accomplished bar manager Todd Newton was hired to reverse the trend. Within a few months, Todd and his veteran bar staff had revived business, and with each passing year the Cantina became more popular. Master mixologist Ryan 'Da Hawaiian' made a million drinks & made everyone smile; Fernando barbacked & worked harder than any man alive; Marc 'The Man' assured security at ALL times; Chip 'The DJ' played the hits & hosted the party, and Nick, Steve, Troy, Don Juan, Max and all the rest were a crew to be reckoned with...
